Della Hyde is Applejack's playful interpretation of vintage hotel bars of the past, with charming interiors and service, good tunes, and a strong focus on seasonally fresh cocktails.
Arches and pink hues defining the space with inspiration drawing from Wes Anderson (Grand Budapest Hotel / Royal Tenenbaums, Darjeeling Ltd) and inspiration from owners Ben and Hamish’s own travels, creating a space truly unique to the Sydney night space.
The drinks list features cocktails that are sophisticated and classic, like the Sparkling Strawberry Daiquiri, as well as more innovative aperitif-styled cocktails; the gin-infused cold drip Count Negroni. The Seasonal Drinks List will be updated fortnightly using seasonal produce. Food wise, the menu has European and North African influences, substantial enough for dinner but also perfect for a couple of snacks alongside cocktails.
